Souse Variation Day

A deeper cut into the souse tradition, honoring the regional differences: chicken souse in Nassau, sheep souse on Eleuthera, and the pig feet version that Andros folks swear by. Each island does it differently, each cook insists theirs is the only correct way, and no Bahamian ever turned down a bowl regardless of what meat is floating in it. The lime, the pepper, and the love are the same everywhere.
