Diada del Trinxat

Trinxat is cabbage, potato, and bacon mashed together into a thick cake and fried in the same pan. It is mountain food, winter food, peasant food, and it is perfect. Every Andorran grandmother makes it in February and every plate disappears before it goes cold.
