In summer, Andorrans eat at mountain restaurants called bordes. Grilled meat, trinxat, all i oli, and red wine at 2,000 meters. The bordes were once shepherds' huts and some still have the stone walls and wooden beams to prove it. A day for the quick meal, the regular customer, the busy cook, and the food people rely on between obligations.
A day for making room at the table when one more person shows up.
