Ruz el Brik
The fried pastry that is Tunisia's gift to Algeria's coast, but Algeria has made it its own. A thin sheet of malsouka wrapped around a whole egg, folded into a triangle, and deep-fried until the pastry shatters and the egg yolk runs. The trick is eating it before the yolk drips onto your shirt. Brik is the appetizer of Ramadan, the star of the iftar table, the first thing that disappears. In Algiers it is called brik, in Oran it is called bourek, and in Constantine it is called brik again but made differently. The egg must be whole when it goes in, and the yolk must be runny when it comes out. Anything less is a failed brik.
