Ruz el Khobz

Khobz eddar, the round flatbread kneaded by women's hands every morning across every kitchen in Algeria, is the staff of life and the object of reverence. If bread falls face-down, you pick it up, kiss it, and touch your forehead. Bread is never thrown away. Stale bread becomes fettouche, besbessa, or feed for the birds. The bakeries open before dawn and the smell of baking khobz is the smell of morning.
