Ruz el Zarda
The Algerian zarda is not a casual sandwich in a park, it is an expedition. The entire family loads into the car, drives to a green spot in the mountains or the forest, sets up a ground covering, builds a fire, and cooks a full meal. The zarda includes mechoui (whole roasted lamb), salade mechouia, baghrir, fruit, and tea. The men cook the meat. The women prepare the salads. The children run wild. The zarda is the Algerian answer to every question about how to spend a day off. The forests of Chrea, the mountains of Tikjda, the coast of Tipaza, the Roman ruins of Djemila: all are zarda destinations, and on any given Friday in spring, every one of them is full.
