Ruz el Mhadjeb
The stuffed flatbread of every bus stop, every road, every quick lunch across the south and the highlands. Thin layers of dough stretched until translucent, filled with tomato, onion, and spices, then folded and griddle-cooked until the outside is crisp and the inside is molten. Mhadjeb is the traveler's fuel. It is cheap, filling, and perfect. Every road between Laghouat and Ghardaia has a mhadjeb stand, and the drivers know which one is best. The dish is simplicity itself, but the technique of stretching the dough takes years to master.
