Ruz el Zarda
The Algerian zarda is not a casual sandwich in a park, it is an expedition. The entire family loads into the car, drives to a green spot in the mountains or the forest, sets up a ground covering, builds a fire, and cooks a full meal. The zarda includes mechoui (whole roasted lamb), salade mechouia, baghrir, fruit, and tea. The men cook the meat. The women prepare the salads. The children run wild. The zarda is the Algerian answer to every question about how to spend a day off.
