The slow-cooked stew of North Africa, made in the conical clay pot that gives it its name. In Algeria, tagine is not one dish but a family of dishes: tagine zitoune with olives and chicken, tagine lahm with lamb and prunes, tagine djedj with preserved lemons, tagine khoukh with peaches in season. The clay pot creates a self-basting environment where the steam condenses on the cone and drips back into the stew, concentrating flavors over hours. The Algerian tagine is different from the Moroccan, richer in saffron and more generous with eggs, which are cracked on top in the final minutes. Every region, every family, every season has its tagine, and every one is the right one.
